Broc-tato Apple Medley

A harmonious blend of roasted broccoli, tender potatoes, sautéed spring onions, and caramelized apples. This hearty side dish is bursting with flavors, textures, and vibrant colors. Perfect for autumn gatherings or as a delicious everyday accompaniment.

- 1 large head of broccoli, cut into florets
- 2 medium-sized potatoes, peeled and cubed
- 2 apples, cored and sliced
- 3 spring onions, chopped
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste

Preheat the oven to 400°F (200°C) and lightly grease a baking sheet.

In a bowl, toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on the baking sheet.

In a separate bowl, toss the potato cubes with the remaining olive oil, salt, and pepper. Arrange them on the same baking sheet as the broccoli, but leave space for the apples.

Place the baking sheet in the oven and roast for 20 minutes.

Meanwhile, heat a skillet over medium heat and add the sliced apples. Sauté them until lightly caramelized, around 5 minutes. Remove from heat and set aside.

In the same skillet, sauté the chopped spring onions until softened, around 2-3 minutes.

Once the potatoes and broccoli have roasted for 20 minutes, remove the baking sheet from the oven and add the caramelized apples and sautéed spring onions. Drizzle the maple syrup and balsamic vinegar over the mixture.

Gently toss all the ingredients on the baking sheet and return it to the oven for an additional 10 minutes.
