Caramel Apple Pie Pierogi

- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, cold and diced
- 1/4 cup sour cream
- 2 medium apples, peeled, cored, and finely chopped
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon vanilla extract
- 1/4 cup caramel sauce, plus extra for drizzling
- Powdered sugar, for dusting

In a mixing bowl, combine flour and salt. Add the cold butter and mix until the mixture resembles bread crumbs.

Stir in the sour cream until the dough comes together. Knead the dough lightly on a floured surface until smooth. Wrap it in plastic wrap and refrigerate for 30 minutes.

In a skillet, melt a tablespoon of butter over medium heat. Add the chopped apples, brown sugar, cinnamon, nutmeg, and vanilla extract. Cook until the apples are caramelized and tender, about 8-10 minutes. Remove from heat.

Roll out the dough on a floured surface until it's about 1/8 inch thick. Cut out circles using a cookie cutter or a glass.
