Caramelized Tomato Tahini Pastry

- 1 sheet puff pastry, thawed
- 1 tbsp olive oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 4 medium tomatoes, diced
- 1/4 cup tahini
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Egg wash (1 egg beaten with 1 tbsp water)

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Heat olive oil in a pan over medium heat. Add onions and sauté until caramelized. Add garlic and cook for an additional minute.

Add tomatoes and cook until they have released their juices and the mixture is thick, around 20 minutes.

Mix the caramelized tomato mixture with tahini and lemon juice. Season with salt and pepper.

Roll out the puff pastry on a floured surface into a rectangle. Cut it into 4 equal squares.
