Rich but Mild Beef and Lentil Chili

- 1 lb ground beef
- 1 can (15 oz) red chili beans in sauce
- 1 cup whole brown lentils, uncooked
- .5 tablespoon Jamaican curry seasoning
- 2 tbsp lime juice
- 2 cups beef broth
- .5 onion, diced
- 1 garlic cloves, minced
- .5 to 1 green bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 tablespoons olive oil
- 2 tbsp coffee
- 1 tbsp cumin
- .5 tsp cinnamon
- pinch nigella seed
- 1 shallot
- .5 tsp black garlic powder
- .5 tsp turmeric
- .5 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tbsp crushed red pepper
- black or rainbow pepper, to taste
- flake sea salt
- 1 carrot or 3-4 baby carrots, diced
- 1 small tomato, diced
- celery leaves, chopped
- 1 or 2 bay leaves
- 2 tbsp beet powder
- 2 dried peppers

In a large pot, heat olive oil over medium heat. Add the vegetables and sauté until softened.

Push the vegetables to one side of the pot and add the ground beef. Cook until browned, breaking it up into small pieces.

Stir in the seasonings, salt, and pepper. Cook for another minute to release the spices' aromas.

Add the lentils, red beans, diced tomatoes (with their juices), and beef broth to the pot. Stir well to combine. Add bay leaves.

Bring the chili to a boil, then reduce the heat to low and simmer, covered, for about 30-40 minutes or until the lentils are tender.

Remove bay leaves. Stir in the lime juice and adjust the seasoning if needed.
