Tropical twist on autumn veggies with jerk seasoning & coconut.
ingredients
- 2 sweet potatoes, cubed
- 1 red onion, sliced
- 2 bell peppers, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 2 tsp jerk seasoning
- Salt and pepper to taste
- 1/4 cup shredded coconut
steps
- 1.
Preheat oven to 400°F.
- 2.
Toss veggies in olive oil, seasoning, salt & pepper.
- 3.
Roast for 30 mins, stirring halfway.
- 4.
Sprinkle with coconut before serving.
