Carrot Citrus Raisin Wine

- 3 ½ lbs carrots, peeled and chopped
- 1 lb raisins
- 5 cups granulated sugar
- 2 tsp yeast energizer
- 6 oranges, juice and rind
- 4 tsp tannin
- 1 campden tablet
- 1 packet wine yeast

Begin by washing and peeling the carrots, then chop them into small pieces.

In a large pot, add the chopped carrots, raisins, and enough water to cover them.

Boil the mixture for about 30 minutes, then remove from heat and let it cool slightly.

Once cooled, strain the liquid into a fermentation vessel, discarding the solids.

Add granulated sugar, orange juice, and the zest of the oranges to the strained liquid. Stir until the sugar dissolves completely.

Prepare the mixture by adding tannin and yeast energizer, then crush the campden tablet and stir it in. Let the mixture sit for 24 hours to allow the campden to work.

After 24 hours, sprinkle the packet of wine yeast over the surface. Do not stir; allow the yeast to activate on its own.

Seal the fermentation vessel with an airlock and let it ferment in a cool, dark place for approximately 4-6 weeks.

Once fermentation is complete, siphon the wine into bottles, leaving sediment behind, and seal tightly.

Age the wine for at least 3 months before tasting to enhance flavors.
