Hydrated baby potatoes and crunchy cashews in a creamy mayonnaise dressing with almonds and fresh veggies. A hearty and satisfying salad with a delicious crunch!
ingredients
- 1 lb baby potatoes, boiled
- 1/2 cup cashews, hydrated
- 1/4 cup almonds, sliced
- 1/2 cup mayonnaise
- 1/2 cup cucumber, diced
- 1/2 cup celery, chopped
- 1/4 cup red onion, minced
- Salt and pepper to taste

In a large bowl, combine potatoes, cashews, almonds, cucumber, celery, and red onion.
