ingredients
- 1 lb chicken thighs, boneless and skinless
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 sweet potato, peeled and diced
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 1/2 cup smooth peanut butter
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp coriander
- Salt and pepper to taste
- Fresh cilantro for garnish

In a large pot, heat olive oil over medium heat and brown chicken thighs on both sides. Remove and set aside.

In the same pot, sauté onion and garlic until fragrant. Add sweet potato, bell pepper, tomatoes, peanut butter, chicken broth, cumin, coriander, salt, and pepper.

Bring to a simmer, then add chicken back to the pot. Cover and cook for 30 minutes or until chicken is cooked through and sweet potatoes are tender.
