This hearty stew combines chicken, vegetables, and creamy peanut sauce for a rich, flavorful dish with a kick of spice. Perfect for a chilly evening or anytime you crave comforting African flavors.
ingredients
- 1 lb chicken thighs, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 1/2 cup peanut butter
- 4 cups chicken broth
- 1 tsp curry powder
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Cooked rice, for serving

In a large pot, brown chicken thighs in oil. Remove and set aside.

Sauté onion and garlic until softened. Add bell pepper and tomatoes.

Stir in peanut butter, chicken broth, curry powder, and cayenne pepper.

Return chicken to the pot and simmer for 20 minutes.
