- 2 cups uncooked brown rice
- 1 lb lean ground beef
- 2 Tbsp salted butter
- 1 yellow onion, diced
- 1 yellow bell pepper, diced
- 2 tsp minced garlic
- 2 14.5oz cans of Sprouts diced tomatoes (not drained)
- 2 4oz cans of Sprouts green chilies (drained)
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup cheddar cheese, shredded
- 1 cup Monterrey jack cheese, shredded
- Avocado, cilantro, and sour cream for garnish

Cook brown rice according to package instructions.

In a large skillet, brown ground beef over medium heat. Drain excess fat.

Add butter, onion, bell pepper, and garlic. Saute until vegetables are tender.

Stir in diced tomatoes, green chilies, salt, and pepper. Simmer for 10 minutes.

Add cooked rice to the skillet and mix well.
- 6.
Sprinkle shredded cheddar and Monterrey jack cheese on top. Cover and let cheese melt.

Serve hot with avocado, cilantro, and sour cream on top.
