Crispy Herb-Stuffed Hash Brown Bites

- ¼ cup fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- ½ cup all-purpose flour
- 1 large egg
- 1 cup breadcrumbs
- Vegetable oil, for frying

Begin by peeling and grating the russet potatoes finely. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

In a large bowl, combine the grated potatoes with garlic powder, onion powder, salt, pepper, and flour.

In another bowl, blend together the cheddar cheese, cream cheese, chives, parsley, salt, and pepper until well mixed.
