ingredients
- 1 cup rolled oats
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup milk
- 1 egg
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 2 tbsp olive oil

In a mixing bowl, combine the oats, flour, baking powder, salt, and black pepper.

In another bowl, whisk the milk and egg together and add it to the dry ingredients to form a batter.

Place a non-stick pan over medium-high heat and brush it with some oil.

Pour about 1/4 cup of batter onto the pan and sprinkle some cheese and tomatoes on top.

Cook for 2-3 minutes or until bubbles appear on the surface, then flip and cook for another 1-2 minutes.

Repeat with the rest of the batter.
