Cherry Almond Mead

ingredients
- 2 lbs dark sweet cherries, pitted and halved
- 3 lbs honey
- 1 gallon filtered water
- 1 tsp almond extract
- 1 packet mead yeast (such as EC-1118)
- 1 tsp yeast nutrient
- 1/2 tsp campden tablets (optional, for sterilization)

In a large pot, combine the pitted cherries with 1 gallon of filtered water. Bring to a gentle boil for about 10 minutes, crushing the cherries slightly to release their juices.

Remove the pot from heat and let the mixture cool to room temperature.

Once cooled, stir in the honey until completely dissolved. If using, crush the campden tablets and add to the mixture. Let sit for 24 hours to sanitize the juice.

After 24 hours, add the yeast nutrient and almond extract, then sprinkle the mead yeast over the surface without stirring.

Cover the pot with a cloth or airlock, and allow it to ferment in a cool, dark place for about 2-4 weeks, or until bubbling ceases.

Once fermentation is complete, siphon the mead into cleaned bottles, leaving sediment behind. Seal the bottles and let them age in a cool spot for at least 2 months.
