Chicken Cake Surprise

- 2.2 lbs boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 cups mashed potatoes
- 1 cup carrots, grated
- 1 cup peas, cooked
- 1 cup cheddar cheese, shredded
- 1 cup breadcrumbs
- 1 cup all-purpose flour
- 1 cup milk
- 4 eggs
- ½ cup vegetable oil
- 2 tablespoons fresh parsley, chopped

Preheat the oven to 350°F (175°C). Grease a round cake pan.

Season chicken breasts with salt and black pepper, then bake for 20 minutes. Let cool and shred the chicken.

In a large bowl, combine the shredded chicken, mashed potatoes, grated carrots, cooked peas, cheddar cheese, breadcrumbs, milk, eggs, vegetable oil, and parsley. Mix well.
