Chicken Pot Pie Brownie Bake

A savory-sweet crossover dish featuring tender chicken pot pie filling baked inside of rich, chocolatey brownie batter for a unique and delicious combination of flavors.

- 1 lb boneless, skinless chicken breast, cubed
- 1 cup frozen mixed vegetables
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup milk
- 3 tbsp butter
- 3 tbsp flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 package brownie mix (plus ingredients called for on package)

Preheat oven to 350°F.

In a skillet over medium-high heat, cook chicken until no longer pink. Add vegetables, onion, and garlic, and cook until vegetables are tender, about 5 minutes.

In a separate saucepan, melt butter over medium heat. Stir in flour, salt, and pepper until smooth. Gradually add chicken broth and milk, stirring constantly. Bring to a boil and cook until thickened, about 2 minutes. Add sauce to chicken mixture and stir to combine.

Prepare brownie mix according to package instructions.

Pour brownie batter into a greased 9x13 inch baking dish. Spoon chicken pot pie mixture over the top of the brownie batter.
