ingredients
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 2 large eggs, lightly beaten
- 1 cup carrots, diced
- 1 cup bell pepper, diced
- 1 cup peas (fresh or frozen)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 green onions, sliced
- Salt and pepper to taste
steps
- 1.
In a medium saucepan, combine quinoa and chicken broth; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy.
- 2.
In a large skillet or wok, heat olive oil over medium-high heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- 3.
Push the chicken to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked, then mix with the chicken.
- 4.
Add garlic, diced carrots, bell pepper, and peas to the skillet; stir-fry for about 3-4 minutes until vegetables are tender.
- 5.
Stir in the cooked quinoa, soy sauce, and sliced green onions; season with salt and pepper to taste. Mix well and cook for an additional 2-3 minutes until heated through.
- 6.
Serve hot, garnished with extra green onions if desired.
