Succulent shrimp in a zesty cilantro lime marinade paired with garlicky broccoli, flavorful pesto zucchini, all served over a bed of rice.
ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb broccoli florets
- 1 lb zucchini, sliced
- 1 cup rice
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1/2 cup pesto sauce
- Salt and pepper to taste

Cook rice according to package instructions.

In a bowl, mix shrimp with 2 tbsp olive oil, garlic, cilantro, lime juice, salt, and pepper. Marinate for 30 mins.

Place shrimp in Suvie protein pan, arrange broccoli on vegetable pan, and zucchini on starch pan. Drizzle with olive oil, salt, and pepper.

Load pans into Suvie, input settings (Shrimp: 130°F, 30 mins; Broccoli: 185°F, 25 mins; Zucchini: 185°F, 20 mins).

Once cooked, sear shrimp in a pan for extra flavor.

Plate shrimp, broccoli, zucchini over rice, and drizzle pesto over zucchini. Enjoy!
