Irresistible Cinnamon Crumb Buns with Homemade Dough and Frothy Yeast

- 2 ½ cups all-purpose flour
- 1/3 cup rolled oats
- 1/3 cup brown sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup melted butter
- 1 ¼ cups milk
- 1/3 cup granulated sugar
- 2 tsp ground cinnamon
- 2 tbsp active dry yeast
- 1/4 cup warm water (+ additional ¼ cup warm water to dissolve yeast mixture)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs

In a small bowl, dissolve the yeast and 1/4 cup of granulated sugar in 1/4 cup warm water. Let it sit for 5 minutes until frothy.

In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Make a well in the center of the dry ingredients and pour in the yeast mixture, melted butter, milk, and eggs. Mix everything together until a soft dough forms. If needed, add a little extra flour.

Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Preheat your oven to 375°F (190°C) and grease a baking dish or line it with parchment paper.

After the dough has risen, punch it down and roll it out into a rectangle shape, about ¼ inch thick.

In a mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt for the crumb topping. Pour in the melted butter and mix until crumbly. Set aside.

Sprinkle the crumb topping mixture evenly over the dough. Starting from one long side, tightly roll up the dough like a jelly roll.

Cut the rolled dough into 12 even slices and place them in the prepared baking dish.

In a small bowl, combine the granulated sugar and ground cinnamon for the dusting mixture. Sprinkle the cinnamon-sugar mixture over the top of each bun.
