Citrus Burst Mead

ingredients
- 4 lbs honey
- 1 gallon water
- Zest of 1 lemon
- Zest of 1 orange
- Zest of 1 grapefruit
- Juice of 1 lemon
- Juice of 1 orange
- Juice of 1 grapefruit
- 1 packet champagne yeast
- 1 tsp yeast nutrient
- 1 tsp yeast energizer

In a large pot, heat water until warm. Then add honey and stir until dissolved.

Add in lemon, orange, and grapefruit zest, and bring to a gentle boil. Remove from heat and let cool to room temperature.

Mix in lemon, orange, and grapefruit juice, yeast nutrient, and yeast energizer. Sprinkle champagne yeast on top and stir gently.

Transfer mixture to a sanitized fermenting vessel and attach an airlock. Let ferment for 2-3 weeks, or until fermentation has slowed down.

Siphon mead into a clean container, leaving behind any sediment, and let it age for 2-3 months.
