ingredients
- 3 oranges
- 2 lemons
- 1 cup pitted dates
- 1 gallon of water
- 3 lbs Desert Creek Wildflower Honey
- 1 packet of champagne yeast
- 1 tsp yeast nutrient
- 1 tsp acid blend
- 1 tsp pectic enzyme
steps
- 1.
Peel and juice the oranges and lemons, reserving the zest.
- 2.
Chop the dates into small pieces.
- 3.
In a large pot, combine water, honey, orange zest, lemon zest, chopped dates, and juice.
- 4.
Heat the mixture to 160°F, then turn off the heat.
- 5.
Stir in the pectic enzyme, acid blend, yeast nutrient, and champagne yeast.
- 6.
Cover and let it cool to room temperature.
- 7.
Transfer to a sanitized fermentation vessel and attach an airlock.
- 8.
Ferment for 4-6 weeks, then transfer to bottles and let it age for at least 6 months.
- 9.
