ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 2 cups spinach, fresh
- 1/4 cup parsley, chopped
- Salt and pepper to taste
steps
- 1.
Rinse quinoa under cold water and drain. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.
- 2.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- 3.
Add shrimp to the skillet and cook until they turn pink, around 4-5 minutes. Stir in orange and lemon zest and juice. Season with salt and pepper.
- 4.
Toss in diced bell pepper, cherry tomatoes, and fresh spinach. Sauté until vegetables are tender and spinach is wilted, about 3 minutes.
- 5.
To assemble, divide quinoa among bowls and top with the citrus garlic scampi and vegetables. Garnish with chopped parsley. Serve warm.
