Citrus-infused Sea Bass with Spring Greens
ingredients
- 4 sea bass fillets (6 oz each)
- 2 oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 4 cups mixed spring greens
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 2 tbsp fresh chopped herbs (such as parsley, dill, or chives)
- Salt and pepper to taste

Preheat oven to 400°F.
- 2.
Season sea bass fillets with salt and pepper. Place on a baking sheet lined with parchment paper.
- 3.
Bake sea bass for 12-15 minutes until cooked through.
- 4.
In a small bowl, whisk together olive oil, lemon juice, and chopped herbs. Season with salt and pepper.
- 5.
Toss spring greens with citrus segments and half of the herb dressing.
- 6.
Divide the salad among 4 plates and top each with a sea bass fillet.
- 7.
Drizzle remaining herb dressing over the top of each fillet.
- 8.
Serve immediately and enjoy!
