- 1 gallon filtered water
- 3 cups alfalfa honey
- 1 large lemon, zested and juiced
- 1 large orange, zested and juiced
- 1/2 teaspoon champagne or mead yeast
- 1/4 teaspoon yeast nutrient
- 1/2 teaspoon acid blend (optional)
- 1/2 teaspoon potassium sorbate (optional, for stabilization)

In a large pot, bring the filtered water to a boil.

Remove from heat, then stir in the alfalfa honey until fully dissolved.

Allow the honey-water mixture to cool to room temperature.

In a sanitized fermentation vessel, combine the lemon and orange zest, lemon juice, and orange juice.

Pour the cooled honey-water mixture into the vessel with the citrus juices.

Sprinkle the yeast and yeast nutrient over the mixture, then stir gently to combine.

Seal the vessel with an airlock and store it in a cool, dark place for about 4-6 weeks, or until fermentation is complete.

After fermentation, use a siphon to transfer the mead into bottles, leaving sediment behind.

If desired, add potassium sorbate for stabilization and allow the mead to age for 2-4 more weeks before serving chilled.
