A traditional mead recipe with a touch of citrus and hops, perfect for sipping on a warm summer day. This farmhouse-style mead is easy to make and will impress your guests with its unique flavor profile.

- 3 gal water
- 6 Ibs Orange Blossom Honey
- 1 tsp Yeast Nutrient
- Wyeast 3711 French Saison Yeast
- 1 Lemon
- 2 oz Saaz Pellet Hops
- 3/4 cup Corn Sugar

In a large pot, heat water to 170°F. Remove from heat and stir in honey until dissolved.

Add yeast nutrient and allow mixture to cool to 70°F.
- 3.
Pitch the French Saison yeast and cover the pot. Allow to ferment for 1 week.
- 4.
After fermentation, squeeze lemon juice into the mead and add Saaz hops. Allow to ferment for an additional 2 weeks.
- 5.
Dissolve corn sugar in 1 cup of water and add to the mead for carbonation.
- 6.
Bottle the mead and let it sit for at least 1 month before enjoying.
