Coconut Oil Chocolate Chip Cookies

Crispy on the outside and soft on the inside, these restaurant-style chocolate chip cookies made with coconut oil are perfect for satisfying your sweet tooth!

- 1/2 cup coconut oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips

Preheat oven to 375°F and line a baking sheet with parchment paper.

In a mixing bowl, cream together the softened coconut oil, granulated sugar, and brown sugar until light and fluffy.

Add in the egg and vanilla extract and mix until well combined.

In another bowl, whisk together flour, baking soda, and salt until evenly combined.

Slowly add in the dry ingredients to the wet ingredients and mix until just combined.

Using a cookie scoop or spoon, place dough balls onto the prepared baking sheet leaving about 2 inches of space between each.
