ingredients
- 4 large collard greens or nori sheets
- 1 cup cooked quinoa
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup purple cabbage, shredded
- 1 avocado, sliced
- Salt to taste For the Creamy Walnut Dressing:
- 1 cup raw walnuts, soaked for 4 hours
- 2 tablespoons lemon juice
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/3 cup water (more if needed)
steps
- 1.
If using collard greens, remove the stems and lightly blanch for 30 seconds in boiling water until softened. Skip this step for nori.
- 2.
In a blender, combine soaked walnuts, lemon juice, onion powder, salt, and water. Blend until smooth, adding more water for desired consistency.
- 3.
Lay the collard greens or nori sheets flat on a clean surface.
- 4.
Spread a layer of quinoa on each wrap, leaving about an inch from the edges.
- 5.
Layer the shredded carrots, cucumber, purple cabbage, and avocado slices on top of the quinoa.
- 6.
Drizzle the creamy walnut dressing over the filling.
- 7.
Carefully roll the wraps tightly from one end to the other, tucking in the sides as you go.
- 8.
Cut each wrap in half, serve immediately, or wrap in parchment paper for a nutritious on-the-go meal.
