Hearty Chicken Spinach Stew
ingredients
- 2 lbs boneless chicken thighs
- 4 cups fresh spinach, roughly chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp dried thyme
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Fresh parsley for garnish

Heat olive oil in a large pot over medium heat.

Season the boneless chicken thighs with salt, pepper, thyme, and smoked paprika.

Sear the chicken in the pot for about 4-5 minutes on each side until browned, then remove and set aside.

In the same pot, add the diced onion and sauté until translucent, about 5 minutes.

Stir in minced garlic and cook for another minute until fragrant.

Return the chicken to the pot and pour in the chicken broth.

Bring to a simmer, cover, and let cook on low for 45 minutes, until the chicken is tender.

Once cooked, remove the chicken, shred the meat, and return it to the pot.

Stir in the chopped spinach and lemon juice, cooking until the spinach wilts, about 2-3 minutes.

Serve hot, garnished with fresh parsley.
