- 2 lbs Cornmeal
- 1 lb Honey
- 1 lb Caramel Malt (40 Lovibond)
- 1 oz Citra Hops (bittering)
- 1 oz Jarrylo Hops (flavor)
- 1 pack American Ale Yeast
- 1 tsp Irish Moss (optional)
- 5 oz Priming Sugar (for bottling)
- 6 gallons water

Begin by heating 3 gallons of water to 165°F in a large brew kettle.

Add the cornmeal, pale malt, and caramel malt, stirring well to prevent clumps.

Maintain temperature at 150-155°F for 60 minutes, then sparge with hot water to collect around 6 gallons of wort.

Boil the wort, adding Citra hops at the start, and Jarrylo hops 15 minutes before the end.

Stir in the honey and Irish Moss in the last 10 minutes of the boil.

Cool the wort quickly using a wort chiller or ice bath.

Transfer the cooled wort to a fermentation bucket and top up to 5 gallons with water if needed.

Pitch the yeast when the temperature is around 68-72°F.

Ferment for about 1-2 weeks until bubbling stops.

Bottle the beer, adding priming sugar, and let it carbonate for 2-3 weeks.
