Ginger Spice Honey Beer

- 3 lbs pale malt extract
- 1 lb honey
- 0.5 lb crystal malt (40L)
- 2 oz fresh ginger, sliced
- 1 oz Saaz hops (bittering)
- 1 oz East Kent Goldings hops (flavor)
- 1 packet of American Ale yeast
- 5 oz priming sugar (for bottling)
- 5 gallons distilled water

Heat 2.5 gallons of distilled water to 160°F in your brew kettle.

Steep the crystal malt in the heated water for 30 minutes, then remove and discard.

Add the pale malt extract and 1 lb of honey, stirring until fully dissolved.

Bring the mixture to a boil, adding the Saaz hops after reaching boiling point.

Boil for 45 minutes, then add the sliced fresh ginger and East Kent Goldings hops.

Boil for an additional 15 minutes, then remove from heat and cool the wort down to 70°F using an ice bath.

Transfer the cooled wort to a sanitized fermentation vessel and top up with 2.5 gallons of distilled water.

Pitch the American Ale yeast into the vessel and seal with an airlock.
- 9.
Ferment for 1-2 weeks, or until fermentation activity has ceased.

Bottle the beer with 5 oz of priming sugar dissolved in a small amount of water.

Cap the bottles and let them condition for another 2 weeks before chilling and enjoying.
