Hearty Chicken Noodle Soup for Cozy Nights
ingredients
- 2 chicken leg quarters
- 1 pound unseated baby potatoes, halved
- 2 cups sliced frozen carrots
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 8 ounces egg noodles
- Fresh parsley for garnish (optional)

Place the chicken leg quarters at the bottom of the crockpot.

Add halved baby potatoes and sliced carrots on top of the chicken.

In a bowl, mix the chopped onion, minced garlic, chicken broth, thyme, rosemary, salt, and pepper.

Pour this mixture over the chicken and vegetables in the crockpot.

Cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the chicken is cooked through and tender.

Remove the chicken, shred the meat, and discard the bones.

Return the shredded chicken to the crockpot.

Add the egg noodles to the soup and cook on high for an additional 30 minutes, or until the noodles are tender.
