Cheesy Avocado Gnocchi Indulgence

- 2 ripe avocados, peeled and pitted
- 1 cup shredded Cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro, for garnish (optional)
- 1 pound potato gnocchi

In a blender or food processor, combine the avocados, Cheddar cheese, Parmesan, heavy cream, garlic, lemon juice, salt, and pepper. Blend until smooth and creamy, adjusting seasoning to taste. If the sauce is too thick, add a splash more cream.

Cook the potato gnocchi according to package instructions in a large pot of boiling salted water until they float to the top, about 2-3 minutes. Reserve 1/2 cup of the cooking water and drain the gnocchi.

In a large skillet over medium heat, combine the gnocchi and the Cheddar avocado sauce, gently tossing them together. If the sauce is too thick, add reserved cooking water a little at a time until desired consistency is reached.
