Creamy Brie-Stuffed Chicken with Spinach Orzo

- 4 boneless, skinless chicken breasts
- 4 oz Brie cheese, cut into 4 slices
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tbsp lemon juice
- Fresh parsley, for garnish

Slice each chicken breast horizontally but not all the way through, creating a pocket. Season with salt and pepper.
