This vegan, WFPB casserole is loaded with nutrient-rich broccoli and cauliflower, blended with creamy plant milk, cashews, and nutritional yeast into a savory and flavorful dish. Perfectly satisfying as a main course or a side dish.
ingredients
- 2 cups broccoli florets, chopped
- 2 cups cauliflower florets, chopped
- 1 cup plain unsweetened plant milk
- ½ cup raw cashews
- ¼ cup nutritional yeast
- 1 tsp garlic powder
- Salt and pepper to taste
steps

Preheat oven to 375°F.

Lightly steam broccoli and cauliflower until partially cooked.

In a blender, add the plant milk, cashews, nutritional yeast, garlic powder, salt, and pepper and blend until smooth.
