A rich and hearty soup made with broccoli and cauliflower, sweet corn, and a zesty homemade salsa - all prepared using the Instant Pot in just minutes. This whole food, plant-based dish is oil-free, high-fiber, and deliciously creamy.
ingredients
- 1 onion, chopped
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups frozen sweet corn
- 4 cups low-sodium vegetable broth
- 2 cups homemade salsa
- 1 cup raw cashews
- 1 tsp smoked paprika
- Salt and black pepper, to taste

Set Instant Pot to sauté mode and add onion. Cook until softened, about 2-3 minutes.

Add broccoli, cauliflower, corn, broth, salsa, cashews, smoked paprika, salt, and pepper. Stir to combine.

Set Instant Pot to manual high pressure for 5 minutes. Once finished, allow pressure to release naturally for 10 minutes before quick releasing any remaining pressure.

Carefully transfer soup to a blender and blend until smooth and creamy. Serve hot with a garnish of salsa and fresh herbs, if desired.
