Tender chicken thighs in a rich butter chicken curry sauce with creamy Greek yogurt, tomatoes, and cashews. A flavorful and comforting dish perfect for a cozy night in.
ingredients
- 1 lb chicken thighs, boneless and skinless
- 1 cup chopped tomatoes
- 1/2 cup Greek yogurt
- 1/3 cup water
- 1/4 cup thickened cream
- 2 tbsp butter chicken curry paste
- 1/4 cup full cream milk
- 1 onion, diced
- 1/4 cup cashews
- 2 tbsp tomato paste
- Fresh coriander, for garnish
- 2 cloves garlic, minced
- 1 tbsp brown sugar
- 1 tbsp tikka spice mix
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp sweet paprika
- 1/2 tsp fenugreek seeds
- 1/2 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- Salt, to taste

In a large skillet, heat some oil over medium heat and brown the chicken thighs on all sides. Remove and set aside.

In the same skillet, add onion and garlic, cook until softened. Add tomato paste, cashews, and spices, stirring well.

Pour in chopped tomatoes, water, and butter chicken curry paste. Stir in Greek yogurt, thickened cream, and full cream milk.

Return chicken to the skillet, cover, and simmer for 20 minutes until chicken is cooked through and sauce is thickened.

Serve over rice or with naan, garnish with fresh coriander.
