Creamy Caramel Egg Custard

- 1/4 cup water
- 4 large eggs
- 2 cups whole milk
- 1/2 teaspoon ground cinnamon

In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves, then increase heat to medium-high. Allow the mixture to cook without stirring until it turns a deep amber color, around 10 minutes. Remove from heat and carefully pour caramel into four ramekins.

In a mixing bowl, whisk together eggs, milk, cinnamon, salt, nutmeg, and cornstarch until well combined.

Pour the custard mixture over the caramel in the ramekins, filling them evenly.

Place the ramekins in a large baking dish and carefully pour hot water into the dish until it reaches halfway up the sides of the ramekins.
