Cheesy Broccoli and Bacon Casserole

- 3 cups frozen broccoli florets
- 1 ½ cups frozen sliced carrots
- 1 small onion, diced
- 6 slices bacon, cooked and crumbled
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 ¼ cups whole milk
- 2 ¼ cups cheddar cheese, shredded
- Salt and pepper to taste

Preheat the oven to 400°F (200°C).

In a large pot of boiling water, cook the frozen broccoli and carrots for 3-4 minutes. Drain and set aside.

In a skillet, melt the butter over medium heat. Add the diced onion and cook until softened and translucent.

Sprinkle the flour over the onions and butter, stirring constantly for about 1 minute to create a roux.

Slowly pour in the milk while whisking continuously until the mixture thickens and is smooth. Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined. Season with salt and pepper.

In a baking dish, combine the cooked broccoli, carrots, and crumbled bacon. Pour the cheese sauce over the vegetables and gently mix together.
