Creamy Croatian Mushroom Risotto

- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 lb mushrooms, cleaned and sliced
- 1 small shallot, finely chopped
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 cup grated Parmesan cheese
- 1/4 cup white wine
- 1 tbsp fresh thyme leaves
- Salt and black pepper, to taste

In a large pot, heat olive oil and butter over medium heat. Sautee shallot, garlic, and mushrooms until tender, about 5-8 minutes.

Add Arborio rice and cook, stirring constantly, until lightly toasted and coated with oil, about 2-3 minutes.

Pour in white wine and cook until mostly evaporated, stirring frequently.

Gradually add chicken or vegetable broth, 1/2 cup at a time, stirring frequently until the broth is absorbed and the rice is cooked through, about 20-25 minutes.
