A luscious garlic shrimp dish with creamy sauce and a medley of fresh vegetables. Low-carb and packed with flavor.
ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup coconut milk
- Salt and pepper, to taste
- 1 zucchini, sliced
- 1 yellow squash, chopped
- 1 cup cauliflower florets, chopped

Melt butter in a skillet over medium heat. Add garlic and sauté.

Stir in zucchini, yellow squash, and cauliflower. Add shrimp and stir together until shrimp is pink.

Pour in coconut milk, season with salt and pepper. Simmer for 5-10 minutes reducing the liquid to a creamy but soupy sauce.
