Herb-Marinated White Bean Salad
ingredients
- 109 oz cannellini beans, drained and rinsed
- 1 1/4 cups extra virgin olive oil
- 5 tablespoons fresh lemon juice
- 5 cloves garlic, minced
- 5 tablespoons fresh parsley, chopped
- 2 1/2 tablespoons fresh oregano, chopped
- 2 1/2 teaspoons fresh thyme leaves
- 1 1/4 teaspoons salt
- 5/8 teaspoon black pepper

In a large bowl, whisk together olive oil, lemon juice, minced garlic, parsley, oregano, thyme, salt, and black pepper.

Add the drained and rinsed cannellini beans to the bowl and gently toss until well coated with the marinade.
