ingredients
- 2 chicken breasts, boneless and skinless
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup chicken broth
- 1 lemon (zested and juiced)
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
steps
- 1.
In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions. Drain and set aside.
- 2.
While the pasta cooks, season the chicken breasts with salt, pepper, thyme, and basil.
- 3.
In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest.
- 4.
In the same skillet, add chicken broth and bring to a simmer. Stir in the heavy cream, lemon zest, and lemon juice. Cook for about 5 minutes until slightly thickened.
- 5.
Slice the chicken and add it to the creamy sauce. Toss in the cooked fettuccine and Parmesan cheese, mixing until well coated.
- 6.
Season with additional salt and pepper, if needed. Garnish with fresh parsley before serving.
