ingredients
- 8 oz linguine noodles
- 2 boneless, skinless chicken breasts (about 1 lb)
- 8 oz cremini mushrooms, sliced
- 3 cloves of garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp dried thyme
- Salt and black pepper, to taste
steps
- 1.
Cook linguine according to package instructions until al dente. Drain and set aside.
- 2.
Season chicken breasts with salt and black pepper. In a large skillet over medium heat, melt butter and olive oil. Cook chicken breasts until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and set aside.
- 3.
In the same skillet, add sliced mushrooms and minced garlic. Cook until mushrooms are golden and tender, about 5 minutes.
- 4.
Reduce heat to low and add heavy cream, dried thyme, salt, and black pepper. Stir well and let it simmer for a couple of minutes until slightly thickened. Add grated Parmesan cheese and stir until melted and smooth.
- 5.
Slice cooked chicken breasts into thin strips and return them to the skillet. Add cooked linguine and toss everything together until well coated in the creamy sauce.
- 6.
Serve the mushroom chicken pasta immediately, garnished with extra Parmesan cheese and a sprig of fresh thyme, if desired.
