Cheesy Parmesan Wheel Pasta

- 12 oz spaghetti or fettuccine
- 1 whole parmesan cheese wheel (about 12 oz, reserve rind)
- 1 cup heavy cream
- 1 cup pasta water (reserved)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ½ teaspoon black pepper
- ½ teaspoon salt (to taste)
- Fresh parsley, chopped (for garnish)
- Crushed red pepper flakes (optional)

Boil a large pot of salted water and cook the spaghetti or fettuccine according to package instructions until al dente. Drain the pasta, reserving 1 cup of pasta water.

While the pasta cooks, carve out a large bowl in the center of the parmesan cheese wheel, leaving a thick enough wall to hold the cheese.

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Pour in the heavy cream and stir, allowing the mixture to simmer for 2-3 minutes until slightly thickened.

Add the cooked pasta to the skillet, tossing to coat in the cream sauce. If needed, adjust the consistency using reserved pasta water.

Grate the insides of the parmesan cheese wheel into the pasta, mixing until creamy and well-combined.

Season with black pepper and salt to taste.

Serve the creamy pasta directly from the cheese wheel, garnished with fresh parsley and crushed red pepper flakes if desired.
