Ricotta Gnocchi with Sauce

"+Gnocchi Ingredients 1. 1lb flour 2. 1 lb ricotta 3. Enough water to arrive at rolling texture 4. Prepared pasta sauce 5. Parmesan cheese In mixing bowl, add flour, make a well in the center, then add ricotta. Mix thoroughly. On flour board, cut in small pieces about the size of a coffee cup. Then roll out to about 1 inch thickness and cut up into small cubes, about ½ inch, and place on a floured board to dry after grazing them n a cheese grater. This is a difficult procedure, as the texture has to be of a certain firmness. When ready to eat, boil 2 quarts of water. Add gnocchi and cook, checking often until they are al dente. Drain and spread sauce over them on the platter. Sprinkle with Parmesan cheese. Serve immediately. Serves 4. You can also make gnocchi with 1 ½ pounds of cooked, potatoes. It is advisable to use red-skinned potatoes, cooked in their skins and then peeled and put through a ricer."
