Mom's Seafood Chowdah

- 4 tablespoons butter
- 1 large onion, diced
- 1 tablespoon Bell's seasoning, adjusted to taste
- 2 teaspoons salt, adjusted to taste
- 1 teaspoon pepper, adjusted to taste
- 3 cans (12 oz each) evaporated milk
- 3 large potatoes, peeled and cubed
- 1 pound chowder fish
- ½ pound raw shrimp, peeled and deveined
- ½ pound scallops
- Just enough water to peek through the potatoes
- 2 bay leaves

In a large pot, melt the butter over medium heat and sauté the diced onion until soft and translucent, about 5 minutes.

Stir in the Bell's seasoning, salt, and pepper, cooking for an additional minute to enhance the flavors.

Add the cubed potatoes and just enough water to peek through, add the bay leaves, lay the chowder fish on top. Cover and bring to a simmer and cook until the potatoes are just tender.

Once the potatoes are cooked, stir in the evaporated milk and bring the mixture back to a gentle simmer.

Once the evaporated milk reaches a simmer add the scallops and the raw shrimp (peeled and deveined). Simmer just until the scallops and shrimp are cooked.

NOTE: This chowder is much better when allowed to sit overnight, but not necessary.
