Savory Tarragon Steak with Asparagus and Red Potato Mash
ingredients
- 4 sirloin steaks (6 oz each)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp fresh tarragon, chopped
- 2 lbs red potatoes, peeled and diced
- 1/2 cup butter
- 1/2 cup milk
- 1 bunch asparagus
- 1/4 cup olive oil
- Salt and pepper, to taste

Preheat grill or grill pan over medium-high heat.

Rub steaks with olive oil, salt, and pepper. Grill to desired doneness.

In a saucepan, heat tarragon with olive oil until warm. Season with salt and pepper.

Boil potatoes until tender. Drain and mash with butter, milk, salt, and pepper.
- 5.
Preheat oven to 400°F. Toss asparagus with olive oil, salt, and pepper. Roast for 15-20 minutes.

Serve steaks topped with tarragon sauce, alongside mashed potatoes and roasted asparagus.
