- 6 cups spring water
- 3 cups raw honey
- 1 vanilla bean, split and scraped
- 1 cup toasted almonds, coarsely chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 packet mead yeast (such as Lalvin D-47)
- 1/4 cup brown sugar

In a large pot, heat the spring water on medium until warm but not boiling.

Slowly add the raw honey, stirring until fully dissolved.

Scrape the seeds of the vanilla bean into the honey-water mixture and add the remaining pod.
