Almond Spice Marshmallow Bites

A delectable blend of fluffy homemade marshmallows, toasted almonds, and a hint of warming nutmeg. These bite-sized treats are perfect for indulging in a little sweetness with a twist of spice.

- 1 ½ cups powdered sugar
- 1 tablespoon nutmeg
- 1 teaspoon vanilla extract
- ½ cup water
- ½ cup granulated sugar
- ¼ cup corn syrup
- ¼ cup toasted almonds, chopped

In a bowl, combine almond flour, powdered sugar, and nutmeg. Set aside.

In a saucepan, mix water, granulated sugar, and corn syrup. Bring to a boil over medium heat, stirring constantly until the mixture reaches a temperature of 240°F (115°C) on a candy thermometer.

While the sugar mixture is heating, prepare a baking dish by lining it with parchment paper and dusting it with some of the almond flour mixture.

Once the sugar mixture reaches the desired temperature, remove from heat. Slowly pour the hot mixture into the bowl of a stand mixer.

Add the vanilla extract to the stand mixer and whip the mixture on high speed for about 10 minutes until light and fluffy.

Pour the marshmallow mixture into the prepared baking dish, smoothing the top with a spatula. Sprinkle the toasted almonds evenly over the top.

Let the marshmallows rest uncovered at room temperature for at least 4 hours, or until set.

Once set, cut the marshmallows into squares using a sharp knife, dusting the sides with the almond flour mixture to prevent sticking.
