Creamy Vanilla Surprise

- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ¼ tsp salt
- ½ cup unsalted butter, cold and cubed
- 1 egg yolk
- 2 tbsp ice-cold water
- 1 ½ cups whole milk
- ½ cup granulated sugar
- 3 tbsp cornstarch
- ¼ tsp salt
- 2 large egg yolks
- 1 tsp vanilla extract
- Icing sugar, for sprinkling

In a large mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg yolk and ice-cold water. Gradually add the egg mixture to the flour mixture until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Roll out the chilled dough into a circle and line an 8-inch tart pan. Trim any excess dough.

In a saucepan, heat the milk over medium heat until steaming. In a separate bowl, whisk together the sugar, cornstarch, salt, egg yolks, and vanilla extract. Slowly pour the hot milk into the egg mixture, whisking constantly.
