Tender chicken, bacon, & baby potatoes in a rich wine sauce.
ingredients
- 1 whole chicken, cut into pieces
- 6 slices bacon, diced
- 1 cup pearl onions
- 8 baby potatoes, cut in half
- 2 1/2 cups red wine
- 2 1/2 cups chicken broth
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp flour
- Salt and pepper to taste

Preheat Dutch oven on stovetop to medium heat

Saute bacon until crispy, set aside
- 3.
Brown chicken in bacon fat, then remove and set aside
- 4.
In the same pan, saute onions, garlic, olive oil & flour until fragrant
- 5.
Add chicken, potatoes, red wine, and chicken broth
- 6.
Season with salt and pepper, bring to a simmer
- 7.
Cover and let simmer for 1 hour until chicken is tender
- 8.
Serve with crispy bacon on top
